BREAD AND BAKING
Besides the traditional conchas and
bolillos, Esquisito Bakery, with five
locations, serves traditional homemade
delights including churros and
empanadas - both Colombian style and
Argentinian. Colombian-style empanada
are crescent-shaped, yellow corn
turnovers stuffed with different meats and
cooked potatoes.
Empanadas specific to Argentina roots
are made with wheat and are fried in hot
oil. They are also filled with a variety of
ingredients such as beef or chicken.
" We try to integrate different cultures, "
explains Luis Diaz, owner of Esquisito
Bakery. " We always try to produce the
best breads made everyday and offered at
the best price. "
Arepas are another specialty here. Arepas
are very popular in South America and
are traditionally made with ground corn
dough and filled with a variety of fresh
fillings. People love the " cheesy " flavor.
Lupe Calderon, manager at Esquisito
Bakery, explains that customers love to
watch their staff make arepas from scratch.
" People stand in line to wait for them, "
she points out. " We sell a lot of arepas. "
Other panaderias in the Southeast
continue to grow and prosper because of
their dedication to producing authentic
breads that their customers know and love.
La Conchita opened in 2019 in
Montevallo, Alabama, a small college
town located in the center of Alabama
about 35 miles south of Birmingham.
Owner Moises Mateo and his wife,
Maria, say they are dedicated to serving
the community with high-quality fresh
products. When they opened, the town had
no other Mexican bakeries.
" We want to create something delicious
for the people, " Moises says.
La Conchita
has 10 full-time employees including two
highly experienced bakers. Their breads
are made by hand in very traditional style.
Baked fresh every morning, there are more
than 100 kinds of breads and pastries,
including empanadas, elephant ears,
bigotes, champurradas, conchas, cuernos,
and ojo de buey.
" Our baker is our inspiration, " Moises says.
One variable that sets La Conchita apart
from others is the fact that Montevallo is a
smaller city (population 7,637) that is most
known for its liberal arts college, the University
of Montevallo, where 3,000 students attend.
This brings a very multicultural flavor to the
town.
" We have a lot of Anglo customers, probably
60% of our customers, " Moises explains.
" They will buy three pieces when they come
in, while our Latino customers buy 10 to 20
pieces at a time. And our Latino customers
come back a
second time every
afternoon. They
buy bread in the
morning and sweets
in the afternoon. "
