When asked what Bobby Jucker of Three Brothers
Bakery in Houston believes to be the most important
oven advances from a retail baker's perspective, he
answers succinctly, " steam generation, and the recovery
aspect of those steam ovens. "
What this experienced baker looks for most of all
in oven technology are the following factors: steam,
recovery, well insulated, and smaller footprint.
" The best for us are the rack ovens, " Jucker says.

" They are better than revolving or deck ovens due to
our variety of needs. If you are strictly a bread baker,
then deck oven is the way to go. "
For others, there are a multitude of options to satisfy
their bakery's oven needs.
In New York City, ALF Bakery, the debut bakery
from industry veteran Amadou Ly, opened in April at
Manhattan's Chelsea Market, on the lower " Chelsea
Local " level. ALF Bakery offers freshly baked breads,
viennoiserie, pastries, and sandwiches. The bakery
specializes in items that utilize the process of lamination.
Dough is prepared with many layers of flour and
butter, creating rich flavor and delicate, light and flaky
textures. By allowing his doughs at ALF to naturally
ferment, and continuing to experiment with methods
and techniques, Amadou's creations are incredibly
flavorful, inspired by the traditional boulangeries of
France,

sharper strategy to pursue more multi-unit wholesale
accounts across the country, St. Louis-based wholesale
bakery Companion plans to bring in more bakery
machinery; tasks that are done by two or three people
now will be performed by a single employee.
" We are putting in better placements of machines, so
we are more efficient, " says Josh Galliano, innovation
leader at Companion.
For instance, the company added five rack ovens to
accompany the previous five. " The next five are touchscreen,
which allows us to make spot changes better. "
