Scale the ingredients and mix until the dough is
developed and smooth. Let the dough rest for 15 min.
Roll out the dough into a log.
Shape the log into a ring (full sheet, half sheet or
quarter sheet).
Add strips of sugar pasta around the ring. (Mix 4 lb.
granulated sugar, 4 lb. powdered sugar, and 8 lb. allpurpose
shortening for 1 minute at low speed, then
scrape and mix for 3 min. at high speed. Add 5 lb. pastry
flour and 5 lb. bread flour, then scrape and mix for 1
minute at low speed.)
Add the citron strips and figs the proof for 30 min. Bake
at 330F for 30 min. Glaze if desired.

Scale the ingredients for the dough, then mix until it
has a smooth surface. Let the dough rest for 15 min.
Scale and round the base (1 LB, 4 oz) and place on a
paper-lined sheet pan.
Cut strips from the dough to form the bones (4 oz per
strip), using your fingers to roll grooves into the strips.
One cut strip should be enough for each base (3 strips
per base). Scale and round the top ball (skull).
Brush each base with egg wash (if applying sesame
seeds) or melted butter (if topping with crystal sugar
after baking), then stretch the bones over the rounded
bases. Place the rounded top ball in the top center, then
brush again in egg wash and top with sesame seeds, as
desired.
Proof the loaves to almost full size, then bake at 360°F
until firm and rich brown in color. If desired, brush them
lightly with melted butter and finish by coating them
with crystal or granulated sugar.
