Manhattan, is celebrating 20 years in business
because of its dedication to perfection.
" Our busiest day of the year is
Christmas Eve, along with Thanksgiving
and New Year's Day, " says Christopher
Rojas, owner at Dyckman Bakery.
" During these holidays, we make
3-pound loaves of teleras - triple the size
of our normal teleras - and also regularly
sell many loaves of pan de Manteca
(made with lard) and pan de Huevo
(made with egg). "
Bread sales are strong throughout the
year at Dyckman Bakery, which offers
other unique favorites like cocopiña, which
is made with bread dough mixed with
coconut and topped with pineapple filling.
" This bread is very popular all year
long, " Rojas says proudly.
SPLURGE PURCHASES

the bakery business sector in Manhattan
and the Bronx.

continued movement toward consumer

" A growing group of consumers are
living with a budget and assessing the need
with an eye on value, " said Marshal Cohen,
chief retail industry advisor for Circana.

money without giving up what they really
want - cutting back in one area of their
budget to free up money to spend on the

The International Foodservice
Manufacturers Association (IFMA) released
its latest 2024 and 2025 Food Away-FromHome
(FAFH) Industry and Segment
Projections. Some of the key highlights
by segment for 2024, with real growth
comparisons to 2023, include the following:
The total restaurant category - including
full-service and limited-service restaurants - is
projected to grow 0.5% on top of 0.8% in
2023. This growth comes from continued
demand from higher income consumers for
restaurant occasions.
Quick service restaurants (QSR), which
have performed significantly better in
recent years than other segments overall,
are projected to grow 0.7%, while the fast
casual segment shows bullish growth of
1.3%, a positive adjustment compared to
the February projection of 0.9%.
Collectively, on-site segments in 2024
are projected to grow 2%.
With the possibilities of declining
energy prices and lower interest rates,
IFMA expects consumer-led growth to
impact 2025, with real growth reaching
1.0% for the year. The total restaurant
category is expected to grow 0.8 %, while
the total on-site category is projected to
grow 1.4%, on a real basis. Inflation for
2025 is currently projected to be 2.0%.
IFMA will update this forecast in late
February 2025.
