ROSCA DE REYES
Pese los ingredientes para la masa, y mezcle hasta tener
una masa desarrollada y suave. Deje reposar la masa por
15 min. Enrolle la masa hasta formar tiras redondas (en
forma de tronco).
Forme anillos con las tiras de masa en charolas enteras,
medias o de un cuarto.
Prepare la pasta de azúcar, mezcle 4 lb de azúcar
granulada, 4 lb. de azúcar glasé/polvo, 8 lb. de grasa
hidrogenada durante 1 min. a velocidad baja; luego de
raspar y mezcle durante 3 min. a velocidad alta. Añada
5 lb. de harina para repostería y 5 lb. de harina para pan,
raspar y mezclar por 1 min. a velocidad baja.
Añada las tiras de pasta de azúcar a la rosca.
Añada las tiras de ate e higos, luego de desarrollar por 30
min. y hornee a 330ºF por 30 min. Glasear si se desea.

PAN DE MUERTO
Pese los ingredientes para la masa, mezcle la masa hasta
desarrollarla y que tenga una superficie suave. Deje
reposar por 15 min. Divida y redonde trozos de 1 lb (4 oz.)
y coloque en laminas para hornear con papel de hornear.
Mida tiras de maza de 4 oz. Use sus dedos para rodar
las tiras de masa y dar forma de hueso. Mida una bola
de 1 oz para el centro.
Cubra cada hogaza con huevo si va a aplicar ajonjolí,
o con mantequilla derretida si va a aplicar azúcar
después de hornear. Ponga 3 tiras en cada pan y la
bola en el centro de las tiras y vuelva a cubrir con
huevo o mantequilla.
Déjelos levar hasta casi su tamaño completo, y
luego hornéelos a 360°F hasta que esté firme y color
marrón. Cubra con mantequilla derretida y empolve
con azúcar granulada.
