Además de las tradicionales conchas y
bolillos, Esquisito Bakery, con cinco locales,
sirve productos caseros tradicionales,
como churros y empanadas, tanto al
estilo colombiano como argentino. Las
empanadas al estilo colombiano son
empanadas de maíz amarillo en forma de
media luna rellenas de diferentes carnes y
papas cocidas.
Las empanadas argentinas se elaboran
con trigo y se fríen en aceite caliente.
También se rellenan con una variedad de
ingredientes como carne de res o pollo.
" Intentamos integrar diferentes culturas, "
explica Luis Díaz, propietario de Esquisito
Bakery. " Siempre intentamos producir
los mejores panes, elaborados cada día y
ofrecidos al mejor precio. "
Las arepas son otra especialidad. Las
arepas son muy populares en América del
Sur y tradicionalmente se elaboran con
masa de maíz molida y se rellenan con una
variedad de rellenos recién hechos. A la
gente le encanta el sabor a queso.
Lupe Calderón, gerente de Esquisito
Bakery, explica que a los clientes les encanta
ver a su personal preparar arepas desde cero.
" La gente hace cola para esperarlas, "
señala. " Vendemos muchas arepas. "
Otras panaderías en el sureste continúan
creciendo y prosperando gracias a su
dedicación a producir panes auténticos que
sus clientes conocen y aman.
La Conchita abrió sus puertas en 2019 en
Montevallo, Alabama, una pequeña ciudad
universitaria ubicada en el centro de Alabama,
a unas 35 millas al sur de Birmingham.
El propietario Moisés Mateo y su esposa,
María, dicen que están dedicados a servir
a la comunidad con productos frescos de
alta calidad. Cuando abrieron, la pequeña
ciudad no tenía panaderías mexicanas.
" Queremos crear algo delicioso para la
gente, " dice Moisés.
La Conchita tiene 10 empleados
de tiempo completo, incluyendo dos
panaderos con mucha experiencia. Sus
panes se elaboran a mano de manera
tradicional. Recién horneados cada mañana,
hay más de 100 tipos de panes y pastelería,
incluyendo empanadas, orejas de elefante,
bigotes, champurradas, conchas, cuernos y
ojos de buey.
" Nuestro panadero es nuestra
inspiración, " dice Moisés.
Una variable que distingue a La
Conchita de otras es el hecho de que
Montevallo es una ciudad más pequeña
(población 7,637) que es más conocida
por su facultad de artes liberales, la
Universidad de Montevallo, donde asisten
3,000 estudiantes. Esto aporta un sabor
multicultural a la ciudad.
" Tenemos muchos clientes anglosajones,
probablemente el 60% de nuestros
clientes, " explica Moisés. " Comprarán
tres piezas cuando vienen, mientras que
nuestros clientes latinos compran de 10 a
20 piezas a la vez. Y nuestros clientes latinos
regresan en la cada tarde. Compran pan por
la mañana y productos dulces por la tarde. "
