SCALE & MIX: Prepare Trigal Dorado® Concha Mix
according to the instructions on the bag: 50 lb. mix, 19 lb.
of water, and 15 oz. yeast. Once it is prepared, scale the
dough to 2 oz. or 3 oz. Add the pasta topping. Use food
coloring to get the color and design you like.
BAKE: Proof until double in size. Bake at 340° F for 12-15
minutes until golden. When using a conventional or rack
oven, set the temperature 20 to 30 degrees lower.
FINISH: Once baked, allow the conchas to cool and place
them in a service case for presentation.

SCALE & MIX: Scale and mix 5 lb. of Trigal Dorado® Tres Leches
Cake Mix. with 1 lb. 4 oz. of water and 2 lb. 3 oz. of whole egg. Mix
according to the instructions on the bag. Use your scale to weigh
all the ingredients, including the water.
BAKE: Bake at 330° F degrees for 23-24 minutes or until
fully baked. When using a conventional or rack oven, set the
temperature 20 to 30 degrees lower than the recipe suggests.
FINISH: Once the cakes are baked and cooled, fill them with
Trigal Dorado® Alegria and cover with Trigal Dorado® Pastry
Topping. Accentuate with the fruit of your choice.
