ica Panadería se especializa en
muchos diferentes tipos de pan
dulce y opera tres ubicaciones en
San José, California. Estella Ortiz dirige
la panadería con su esposo, Jesús, quien
creció alrededor de la panadería de su padre
en Michoacán, México, donde aprendió a
hornear a una edad temprana.
"Cuando mi esposo vino aquí, comenzó
a trabajar en una panadería en San José.
Luego mi esposo la dejo para dedicarse a
esta panadería," explica Estella Ortiz.
Hoy en día, los propietarios se
esfuerzan por traer los auténticos sabores
de Michoacán a sus panes y pastelería,
incluyendo el picón, el pan de elote
y el pan de feria, un pan único hecho
específicamente para las celebraciones. Los
propietarios lo llaman pan de festival.
"Lo vimos primero en México y luego
decidimos que lo haríamos aquí," dice
Ortiz del pan de feria, que es un pan con
dos húmedas capas externas y un relleno
único y cremoso en el interior. "Se hizo
tan popular que comenzamos a hacer
pasteles tres leches debido a las solicitudes
de los clientes."
Rica Panadería ha estado en el negocio
por más de 25 años y se ha expandido a tres
ubicaciones en toda la ciudad. La apertura
de su nueva tienda más reciente se produjo
hace una década.
San José es la ciudad más grande en el
condado de Santa Clara, que recientemente
fue nombrado como el condado de más
rápido crecimiento en California, y gran
parte de su crecimiento se atribuye a
los jóvenes trabajadores en la industria
tecnológica que son atraídos a la región.
En 2012, la población del condado creció
1.6%, y 1.7% en 2013. San José alcanzó un
millón de residentes a principios de 2014,
lo cual es un hito importante.
Las personas de origen hispano son el
33% de la población de San José, lo que la
convierte en una de las mayores poblaciones
de hispanos en el país.
Estella Ortiz dice que se esfuerzan por
brindar un servicio al cliente excepcional
y auténticos panes y pastelería que sus
clientes conocen y aman. Mantenerse fiel
a sus raíces ha demostrado ser un factor
integral para el éxito de la panadería.
