ola's Market se enorgullece de
operar panaderías que producen
productos desde cero, pesar todos los
ingredientes y moldear la masa a mano, así
como hornear todos los días. "La gente sabe
que nuestro compromiso con la frescura es
la clave," dice el propietario de Lola's, David
Ortega. "El secreto es mantenerse fiel a sus
raíces y servir todo fresco."
Productos de panadería exclusivos como
el bolteado de piña (repostería cubierta con
rodajas de piña fresca), la tostada de fina
(cubierta con trozos de masa en colores
brillantes) y pasteles de moca de chocolate
con fresas frescas de California transmiten
una imagen de frescura y singularidad para
los clientes.
El valor y la alta calidad son primordiales
para el éxito de Lola's. Una rica porción
de pastel mil hojas se vende por menos de
$4, mientras que las empanadas rellenas se
venden por $1 cada una. Hacen conchas
regulares y de tamaño grande y las decoran
en colores creativos, incluyendo el color
naranja para el otoño y el invierno.
Siguiendo el modelo de una panadería
típica de Pueblo, los panaderos utilizan
métodos tradicionales e ingredientes
frescos para crear panes dulces y pasteles de
excepcional calidad.
"Nuestro negocio está creciendo. Las
ventas aumentaron este año," dice Ortega.
"Hemos agregado nuevos productos y
BakeMark nos ayuda a mantenernos al día

El jefe de panaderos, Mario Lozana,
dice que los pasteles tres leches se están
vendiendo particularmente bien en los
últimos años, ya que Lola's se ha ganado
una reputación estelar por la calidad y la
presentación de sus pasteles.
En la región turística del condado de
Sonoma, Ortega notó desde el principio
que los pasteles y los antojos dulces
comenzaron a venderse más que el pan
en sus panaderías. Vale la pena considerar
dos factores como la causa. Los hispanos
de segunda y tercera generación están
adoptando más sabores, y los clientes
generales están descubriendo que Lola's no
es sólo una tienda de comestibles para los
hispanos únicamente.
"Los pasteles tres leches son nuestros
productos de mejor venta. Es porque
hacemos cosas especiales como hacer
nuestra propia cobertura batida. La gente
reconoce la diferencia," dice.
Los pasteles tres leches distintivos de
Lola's se han vuelto tan populares que
Ortega ha ganado nuevas oportunidades de
negocio al expandir sus ofertas de catering.
En los últimos años, comenzaron a
suministrar pasteles tres leches a las bodegas
de vino locales que ofrecen visitas turísticas.
Lola's Market es una operación de seis
tiendas cuyas panaderías, delis, carnes y
productos agrícolas frescos forman la base
fundamental de uno de los principales
supermercados hispanos en Santa Rosa y el
condado de Sonoma. Hay dos Lola's Market
en Santa Rosa, una en Healdsburg, una en
Napa, una en Petaluma y una en Vallejo,
la más nueva. Su nueva tienda en Vallejo
es su ubicación más sureña, a menos de 50
millas de San Francisco, y presenta un diseño
similar al de las otras tiendas Lola's en un
espacio de 13,000 pies cuadrados.
La frescura es la característica distintiva
de Lola's Market en el departamento
de panadería y otros departamentos de
productos perecederos, y la panadería
funciona 16 horas al día, siete días a la
semana. Se especializan en auténticos panes
dulces hechos a mano.
