trends, bridal couples are requesting more cupcakes
and mini sweet breads for the dessert tables at their
wedding celebrations.
"The cake and dessert tables are very popular
now," Jose says. "We also make heart-shaped wedding
cookies that are very popular."
Dessert cakes are gaining widespread popularity
across the Pacific Northwest. At La Mexicana Super
Market in Wenatchee, Washington, "a lot of people love
our mocha cake, which is covered with ganache from
BakeMark. All of our cake products are from BakeMark,"
says Melanie Hernandez, the daughter of La Mexicana
Super Market owners Socrates and Azucena Hernandez.
"We also do chocoflan cakes, and people always love them.
People come from many other places to buy our cakes
and breads."
To appeal to consumers who are on the go, La
Mexicana Super Market offers a single-serve cake item
they call "carlotas," in which they add white cake with
frosting and sprinkles and serve in a cup.
The signature mil hojas cakes at Miranda's Bakery
in Woodburn, Oregon, which are topped with fresh
grapes, strawberries, kiwifruit, peaches and pineapple,
are so popular that the bakery does not experience
a typical slowdown in cake sales during the winter

months. Cake sales are strong and steady all year long.
In fact, customers increasingly order mil hojas cakes
for their special occasions including weddings and
quinceañeras. Miranda's Bakery recently created a four-tier
mil hojas wedding cake with two full sheet cakes, three
half sheet cakes and one quarter sheet cake. The amount
of fresh fruit on top makes quite a statement.
"I worked with that cake so many years in Los
Angeles," Miranda's Bakery owner Gustavo Miranda
says of his time working at a Los Angeles bakery prior
to moving to Woodburn. "When I came here, I think we
were the first to have it in this area."
Innovation at Maravilla's Bakery & Coffee in Salem,
Oregon, has been rewarded with continued recognition
by the surrounding community in Oregon, including
special notoriety when the state of Oregon celebrated
its 150th anniversary and selected Maravilla's to make
special cakes in honor of this distinction.
"When they selected us, they sent us their 150th
anniversary logo and asked for four big cakes," coowner Alma Maravilla says. "We made an edible image
and presented them with the cakes. The governor tasted
our cake and said it was the best tres leches cake he ever
tasted. That, for me, was an honor."
Su Casa Super Mercado in Hillsboro, Oregon,
makes a high-quality statement to customers with its
presentation of finely decorated cakes. Cake decorator
Karime Medina Morgan is a skilled decorator who
takes great pride in her designs. She loves to decorate in
bright, vibrant colors (purple, red, pink, blue) and creates
sophisticated designs for her tres leches cakes.
