The top five sellers here are bolillos, conchas, teleras, caracoles and cheesecakes, and the bakery specializes in more than 30 items, which are made fresh daily. Business is brisk all year-round. With two stores now in Fontana, California, Panadería Maria is capitalizing on the area's rapid growth. Now the city is booming, as Fontana's population has doubled in size to 210,000 over the past 20 years. Maria Heliodoro Casillas, owner of Panadería Maria, says that her bakery is firmly committed to serving the growing numbers of Hispanic families who are moving into the area. "Our customers are 100% Mexican," she says. Casillas and her husband, who has been a baker since he was a young boy in Mexico, have many years of bakery experience, so they understand how to offer what their customers want.
