Tropicana Bakery & Cuban Café was founded in 1999
by Melvyn Madrazo Sr. and his wife, Adela. Today, three
of their children - Miguel, Albert and Melvyn Jr. - are
also involved in the management and daily operations of
the family-owned business.
Melvyn Madrazo Sr., a Cuban-born American citizen,
initially started in the restaurant business in Los Angeles
by launching a rotisserie chicken restaurant known as Los
Pollos. His wife, Adela, who is originally from Culiacan,
Mexico, helped bring a cross-cultural approach to the

"What's unique about us is that we look at all traditional
recipes, and each member of our family has added a unique
touch," says Miguel Madrazo.
The signature item of this extremely popular CubanMexican bakery is the guava and cheese pastelito, a Cubanstyle pastry for which Tropicana Bakery uses honey glaze
to sweeten the guava. This extra step gives the pastry a
unique sweetness that appeals to many customers. The
bakery will sell several thousand guava and cheese pastelitos
on a busy weekend. "That has been the traditional dish
that we are known for."
