Antojos Dulces del Caribe
En El Zócalo Supermarket en
Haines City, Florida, es cada vez
más común que los clientes disfruten
de una rebanada de pan de fiesta
mientras se sientan y disfrutan su
café de la mañana o de la tarde. Un
tipo de pan de fiesta ofrecido por
esta panadería innovadora se hace
con leche, almidón de maíz, azúcar
y sabor de fresa.
Otros antojos dulces populares
en El Zócalo son el pastel helado,
un pastel con sabor a café, y
los quesitos, que son piezas de
repostería retorcidas rellenas de
guayaba o queso.
Hace unos años, las ventas
de panadería en El Zócalo eran
impulsadas por los clientes de
origen mexicano, pero ahora eso
está cambiando, según el dueño

los últimos tres años, los clientes
puertorriqueños se han convertido
en el segmento de clientes de mayor
crecimiento. Él estima que la actual
mezcla de clientes varía desde los de
origen mexicano (60 por ciento), del
Caribe (25 por ciento, en su mayoría
puertorriqueños y algunos cubanos)
y otros de Sudamérica.
Todo esto representa un
aumento en la demanda de
bocadillos dulces de diferentes
culturas. "La gente quiere ver más
variedad," dice Tejada.
Alex Tortillería Restaurant y
Bakery, que abrió sus puertas en
Orlando en 2001, se especializa en
auténticos panes dulces, incluyendo
las orejas y las piedras. El chocoflan
es otro producto de mayor venta y lo
ofrecen en rebanadas individuales en
convenientes envases transparentes.
Alex Honorato, que ayuda
a dirigir la panadería para su
negocio familiar, explica que
están produciendo más parfaits
y repostería para atraer a los
compradores que desean algo
portátil. Uno de los productos de
mayor venta es lo que llaman el
borracho, un parfait que está con
trozos de pastel, crema y virutas de
chocolate con una cereza encima.
De manera similar, la repostería
ahora representa el 25 por ciento
de todas las ventas de El Panque y
la Rosca Bakery en Bartow, Florida,
que ha duplicado sus ventas totales
de panadería en el último año.
