A La Reyna Bakery en Santa
Rosa, California, nuestro negocio
ha crecido de manera significativa,

como una hora de distancia, dice
Teresa Aranda. "Las razones de
nuestro éxito se basan en que somos
orientados a la familia, la calidad
de nuestro pan, nuestro servicio al
cliente y tener pan fresco todos los
días."
Angélica Aranda señala que las
conchas y otros panes se agotan
todas las noches, por lo general a

saben que el pan va a estar fresco

tercer lugar.
Otras
investigaciones
apoyan la evidencia de que los
consumidores exigen que la frescura
sea lo principal en la panadería.
Un estudio de 2015 del Consejo
Internacional
de
Información
Alimentaria encontró que más de la
mitad de los consumidores primero
ven la fecha de caducidad cuando
están decidiendo hacer una compra.
Esto fue el factor motivante de
mayor importancia, por delante del
contenido nutricional y la lista de
ingredientes.

de California ofrecen numerosos
ejemplos de cómo ofrecer una
variedad de opciones frescas y
productos distintivos puede resultar
en ventas más altas.
Lola's Market, basada en Santa
Rosa, California, aprovechó el
sector de turismo a principios de

este año con un evento de servicio
de catering en el que ofrecieron
buñuelos y churros recién hechos,
además de una variedad de carnes y
antojos rápidos. El propietario David
Ortega recuerda que vendieron
700 churros - todos recién hechos
a mano - en varias horas, mientras
que un vendedor competitivo tuvo
problemas para vender solo uno. "El
competidor no vendió ni un churro
hasta que nosotros terminamos con
los nuestros."
  Panadería Tres Hermanos #3,
en Salinas, California, cuenta con
artículos dulces de panadería que son
comunes en el estado de Michoacán.
Ejemplos son un pan dulce conocido
como nata (hecho con mantequilla,
queso crema, azúcar y leche) o rieles
(hechos con masa de panecillo y
piña). La nata es la crema que se
espesa y se cuaja cuando se hierve
la leche, y es naturalmente dulce y
sedosa. Añade un sabor delicioso
cuando se mezcla con la masa de pan.
