CAKES AND DECORATING Fondant Cakes When your desired outcome is to create a whimsical (a topsy-turvy cake) or lifelike design (a purse cake), using rolled fondant is often the desired method of execution for cake decorators. Until recently, rolled fondant cakes were not common in Hispanic bakeries, but that is changing – as tastes have evolved and Hispanic bakery shoppers have grown more acculturated. Gladys Rodriguez of Paco’s Bakery in Houston points out that Hispanic and non-Hispanic customers love their fondant cakes equally. “We have customers from everywhere,” she says. “It’s doesn’t matter where they are from, they know our cakes are good.” JUNE 13 | PANADERIA 37
